Chutney chicken wings

One can never go wrong with good ol’ chicken wings on the braai. Here’s a great recipe to try this weekend. Enjoy with a glass of Rib Shack Red.

Ingredients

  • 10 chicken wings, trim the pinions/tips off
  • 1/2cupmrs balls peach chutney
  • 1/4cupmayo
  • 30mlolive oil
  • Freshly ground black pepper

Method:

Preheat the oven to 200 degrees.

In a bowl, combine the chutney, mayo, oil and pepper together.

Add the chicken wings, make sure they are well coated.

Arrange onto a non-stick baking tray and roast for 45 minutes until golden and sticky.

Serve on a platter with samoosas and sweet chilli dip.

Bacon and mushroom potjiekos

Here’s a great potjiekos recipe for the weekend. Nothing says weekend like a potjie, good friends and a glass of Rib Shack Red.

 

Ingredients:

1 kg Carrots
1 kg Baby potatoes
1.5 kg Green Beans
1 kg mushrooms (sliced)
2 Onions (sliced)
500g tomatoes (skinned and chopped)
4 kg Chuck  (cut into cubes)
750 g Bacon – rinds removed
50 ml Chopped Parsley

Method:

Cut bacon into pieces and fry in potjie until crisp. Add onion and mushrooms and sauté until onion is transparent. Remove from potjie and set aside. Add oil to potjie, add meat gradually and brown. Layer the meat, onion and mushrooms mixture, carrots, potatoes and beans in the potjie. Sprinkle with chopped parsley and place tomatoes on top. Cover with lid and simmer slowly for 1 ½ – 2 hours or until meat is tender. Enjoy with rice.

Butterfly Lamb

Here’s a Mother’s Day Braai recipe. Changing thing up from the usual garlic and herb flavoured lamb. So treat the woman in your life with a great braai.

Ingredients

3 tablespoons lemon juice
1 tablespoon oil
2 tablespoons mustard
1 tablespoon dried rosemary
2 teaspoons chicken stock powder
1 teaspoon ground black pepper

1 1/2 kg deboned leg of lamb3 tablespoons honey

 

Method

Mix all of the marinade ingredients together and microwave for about 1 minute to dissolve the honey.

Place the lamb in a dish and cover with the marinade, turning to coat all over. Cover with cling film and let it marinade overnight. 24 hours in the marinade is better, so prepare on Saturday for your Sunday lunch.

Braai
Braai over medium/low coals until done (also about 40 minutes)

Remember to let it rest for 5-10 minutes before slicing. This will ensure that the juices do not run out and leave the meat dry.
